Taking Advantage of the Season’s Best

Tomatoes! Tomatoes! Tomatoes!
It is that time of year when my garden produces tomatoes faster than I can eat them. So, I turn them into salsa. Here is my basic recipe for gluten-free salsa, (although I tend to add ingredients by sight and taste, not by exact measuring).

Ingredients:

10-12 roma tomatoes
handful of fresh cilantro (approx. 1/4 cup)
1/4 large yellow onion
1-2 jalapeño peppers (depending how much heat you want)
2 cloves Garlic
1 tsp. Cumin
1/2 tsp Salt
Splash of lime juice

Directions:

Add to food processor and pulse until desired consistency.
Enjoy with gluten-free corn chips!
