My husband had mentioned last week that pot pie sounded good, but unless he went out and purchased a frozen one, it was not going to happen.
I had a pie mix from Mom’s Place I had wanted to try, so I went WAY outside my comfort zone and made a chicken pot pie this weekend.
I am not one to follow recipes, so aside from making the crust as directed, the filling was based on several different recipes I pulled from Pinterest. Essential ingredients: butter and gf flour (I used Pamela’s) to make a rue, onions, carrots, celery, frozen peas, shredded chicken (I used a store bought rotisserie), chicken stock and heavy cream. There was also salt, pepper and rosemary thrown in.
It came out so much better than I hoped. The crust was delicious. Flaky, not crumbly or doughy. My daughter has not stopped talking about it and is now requesting it for her birthday dinner. My husband keeps teasing that I created a core memory (hello Joy).
