One of the products I picked up at Walt Churchill’s was a boxed mixed from 123 Gluten Free. I am always a bit nervous about purchasing gluten-free boxed mixes. In my experience, they tend to be a bit on the gritty side, and I have found that when I bake things from scratch, they taste better.
This box mix did not hold to the normal rule. It was easy and tasted great. The type of mixed was Sugar & Spice Pan Bars. Essentially, spice cake. The added ingredients were fairly minimal- eggs, vegetable oil and sugar free apple sauce. The addition of the sugar free apple sauce made me feel like I was making something healthier. . . probably not exactly true.
I served it to several of my gluten-eating friends, and they were shocked that it was gluten-free. My husband could not get enough.
I am anxious to try more mixes from this brand.

That spice cake was delicious. It was so moist and wasn’t grainy at all. You can make that 123 Gluten Free anytime!
