Perfect Potato Pancakes

Looking for something special to serve for breakfast over the holidays? Try some potato pancakes.  Great for Hanukah too.

I modified this recipe from one I found on food network.  Simple substitutes make it a great gluten-free dish.

Ingredients:

5 large potatoes

1 large onion

1 egg

2 tablespoons gluten-free flour mix (any baking mix will work)

Salt and Pepper for taste

Vegetable Oil for frying

Apple Sauce (You can serve with sour cream too, but I prefer apple sauce. ).

 

Peel  and soak potatoes in cold water immediately.  Then grate potatoes and onions (I love my food processor for this!)

Drain the water from the potatoes and onions.  This is important, otherwise your pancakes will not stay together and will take forever to cook.

Mix potatoes and onions with egg, flour, salt and pepper.

Heat large skillet with oil, to medium heat.  (You will likely have to add more oil into the skillet as you continue to make the pancakes.)

Take large spoonfuls of the mixture and place in skillet, flatten it with a spatula and cook each pancake for 3-4 minutes per side.

I kept the completed pancakes in the oven to stay warm while I finished the batch.
