Not So Moist Muffins

Last week I found a mix I had not tried at Kroger.  I had a brunch to attend and wanted to bake some muffins that I could eat.

The mix I tried was Hodgson Mill Apple Cinnamon Muffins.  The ingredient that seem to be missing from the mix was moisture.  The muffins were rather dry.  I liked the fact that there were chunks of apple in the mix, however the process of apples rehydrating themselves appears to have sucked all of the moisture out of the rest of the muffin.  The flavor of the mix was pretty good, but it was hard to get over the dryness and focus on the flavor.

I am not anxious to try this mix again, but if I did I think I would have to add apple sauce or something to try and add some moisture.

    I’m sorry to hear this. I absolutely love these muffins and I have not noticed them being dry. I did note that they were not sweet enough for me and I add more sugar than called for on the box. I like to make these before trips and use them for a quick breakfast as they keep quite well for a few days in a sandwich bag. I wonder if the box you had might ahve been expired?
