Mmm Cheese . . . and a Veggie

Looking for a gluten-free side dish for Thanksgiving?  Try this one.

Cauliflower Gratin

Ingredients:

4 tbsp unsalted butter

2 small heads of cauliflower

1/4 cup gluten-free flour mix (basic baking mix will work – I use Red Mills)

2 cups whole milk

6 oz extra sharp cheddar grated (know that some shredded cheese uses wheat flour to keep cheese from clumping – read labels)

1/8 tsp nutmeg

salt and pepper to taste

1 cup gluten-free bread crumbs

2 tbsp olive oil

Directions:

Heat oven to 375.  Butter shallow baking dish.

Steam cauliflower (12-15 minutes)

While Cauliflower is steaming, melt butter in large saucepan.  Sprinkle in flour and cook while stirring (2 minutes).

Gradually whisk in milk and bring to a boil.

Reduce heat and simmer, stirring occasionally until thickened (6-8 minutes).

Remove from heat.  Place cauliflower in baking dish, pour cheese mixture over cauliflower.  Sprinkle bread crumbs over mixture.

Bake 15-20 minutes.
