Big Breakfast Sunday

My husband loves breakfast. Every few weeks I try to make a big breakfast for him. And, since I am the one cooking it, it is always gluten free. Today was Big Breakfast Sunday. It turned out great. On the menu: Pancakes, Bacon, Eggs and Fried Apples.


The bacon was Boar’s Head, which guarantees that all of their meat, cheese and condiments are gluten-free. The pancakes were made with Pamela’s Pancake Mix. I follow the recipe except I add a splash of vanilla. It makes the pancakes fluffier. For the apples, I sliced apples and sautéed them in butter and brown sugar. The eggs were scrambled with some added garden flavor: jalapeño, tomato, and red pepper from our garden. It was a great gluten-free start to a Sunday!
