Recently in my trips to Costco, I have been noticing more and more gluten-free products. Two weeks ago there was an all-purpose gluten-free flour. This week I found Super Seeded Multi-Grain bread by The Essential Baking Company. It is sold in packs of two, but if you do not open the separately sealed loaves, the expiration date is in April.
Given this expiration date, I am guessing there are a lot of preservatives, but I have it a try anyway. Unlike most gluten-free breads, this bread did not crumble and fall apart when it was cut. I went with the standard test of any bread- a peanut butter and jelly sandwich. If you are opposed to bread with texture, this is not for you. There are seeds throughout the loaf. The bread looks to be porous, but it is not really. The jelly did not soak into the bread.
It had a pretty good taste, but not a traditional bread texture. The extended expiration date made it worth the bulk purchase.
